Sweet Summer Popsicle’s

Ingredients (Makes 4 Blocks)

  • 1 cup of fruit of your choice-I used peach, grapes, frozen blueberries, frozen raspberries, strawberries and kiwifruit
  • 4 Mint leaves
  • 1/4 cup Pimms
  • /4 cup lemonade (I used Eff lemon and lime sparkling drink)
  • ou will also need an ice block mold set that holds four ice blocks, roughly 1/2 cup of liquid in each

Ingredients

These pops are quite lime-y, if they are too tart and strong, reduce the lime juice or add more sugar/water to taste. Feel free to leave out to booze–or replace it with fruit juice–to make these pops friendly for everyone.

  • 3 cups water, divided
  • 1/2 cup sugar
  • 1/4 cup loosely packed basil leaves
  • 1/2 cup fresh squeezed lime juice
  • tiny pinch of salt
  • 1/3 cup gin

Ingredients (Makes 8)

  • 500ml/ 2cups water (sparkling if you prefer)
  • 1 lime
  • A bunch of mint
  • 3 tbsp brown sugar
  • 1/2 tsp of rum (optional)

  • 1 13.5 oz can coconut milk (about 1 2/3 cups)
  • 3 tbsp sugar
  • 1 1/2 mangoes (about 3 cups)

  • Marciano cherries – no stems

Ingredients

Makes 8 Pops

  • 2 cups fresh grapefruit juice
  • 1/4 cup lime juice
  • 1/2 cup simple syrup
  • 1 1/2 cups tequila
  • 1 cup club soda
  • 1 cup orange juice
  • flaky salt
  • grated lime zest

 

Basil Mint Citrus Mojito Popsicles

Ingredients

  • 12 fresh mint leaves
  • 12 fresh basil leaves
  • 1/2 C fresh squeezed orange juice (3-5 oranges depending on how big they are; I ended up using 4)
  • 2 T lemon juice (1 lemon, if you want fresh squeezed juice)
  • 2 T lime juice (1 lime, if you want fresh squeezed juice)
  • 2 1/2 T sugar
  • 1 C crushed ice
  • 2 T rum (optional)

  • 1 Vanilla pudding batch (recipe follows)
  • 5oz vodka
  • 2oz Kahlua
  • 2oz Bailey’s Irish Cream

Ingredients Black Russian Poptail

  • 1 chocolate pudding batch (recipe follows)
  • 5oz vodka
  • 3 oz kahlua

  • 1/2 cup sugar
  • 1 cup water
  • 1 cup fresh squeezed lime juice (8-12 small limes, usually)
  • 1/4 cup silver tequila
  • 1/4 cup orange liqueur
  • 12 3 oz disposable paper cups
  • 12 wooden popsicle sticks or spoons
