  • 2 Betty Crocker™ pound cake mixes
  • Butter, eggs, and water (or milk) needed for cake mix
  • 2 tubs Betty Crocker™ Whipped white frosting
  • 1 (8 ounce) tub frozen whipped topping, thawed
  • 1 1/2 pounds strawberries, wiped clean with a damp paper towel
  • 36 ounces red fondant
  • 4 ounces green fondant
  • Black food coloring marker

Surprise Skittles Rainbow Cake

Ingredients

For the sponges:

  • 225g unsalted butter, softened, plus extra for greasing the tins
  • 400g caster sugar
  • 500g plain flour
  • 2 tsp baking powder
  • 1½ tsp bicarbonate of soda
  • 1 tsp table salt
  • 2 tsp vanilla extract
  • 4 large eggs
  • 500ml buttermilk
  • Sugarflair pastel paste colours in Magenta, Aztec blue, Apple Green, Cherry red, Apricot and Daffodil (this brand is available from various online stockists)
  • 1 x 174g Skittles fruit pouch

For the cream cheese icing:

  • 200g unsalted butter, softened
  • 400g full-fat Philadelphia
  • 2 tsp vanilla extract or bean paste
  • 300g icing sugar

  • 2 containers of frosting (any flavour)
  • An assortment of small candies (i.e. jelly beans, M&Ms, lollipops, snack-size chocolate bars, etc.)
  • A 1.5 quart oven-safe bowl (greased and floured)
  • An offset spatula.

  • Food coloring of your choice

  • 1/2 cup vegetable shortening
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • 2 tablespoons milk (or more for thinner consistency)

  • 1 tablespoon green tea (matcha) powder mixed w/ 2 tsp hot water, OR green food colouring
  • 3 1/2 teaspoons cocoa powder mixed w/ 1 1/2 tsp hot water
