Dark Chocolate Guinness Cake with Baileys Irish Cream Icing

What You Will Need
Dark Chocolate Guinness Cake
- 250ml Guinness beer (1 cup)
- 250g butter (1 cup + 1 tbsp)
- 100g cup cocoa powder (2/3 cup)
- 400g caster/superfine sugar (1¾ cups)
- 140ml sour cream (2/3 cup)
- 2 eggs
- 1 tbsp vanilla extract
- 250g plain flour (2 cups)
- 2½ tsp bicarbonate of soda/baking soda
Baileys Cream Cheese Icing
- 500-600g sifted icing sugar/powdered sugar (4-5 cups)
- 100g butter at room temperature (1/2 cup)
- 250g cream cheese at room temperature (8oz)
- 4-6 tbsps Baileys Irish Cream (to taste)
Mojito Cake

What You Will Need
- eggs 6
- golden caster sugar 260g
- melted butter 115g, cooled to room temperature
- vanilla extract 1 tsp
- plain flour 260g
Mojito-infused sugar syrup
- light muscovado sugar 150g
- limes 4, 2 zested and juiced, 2 thinly sliced for the top
- white rum 75ml
- mint a medium-sized bunch, leaves only, torn or cut into small pieces
Lime butter cream
- butter 200g, room temperature
- icing sugar 400g, sifted
- vanilla bean paste ½ tsp or 1 tsp
- vanilla extract
- limes 2, zested and juiced
Pimms Lemon Drizzle Cake

What You Will Need
- 225 g unsalted butter
- 200 g caster sugar
- 4 eggs, beaten
- 225 g self-raisin flour
- Finely grated zest and freshly squeezed juice of 1 orange
- Finely grated zest and freshly squeezed juice of 1 lemon
- Handful of fresh mint, finely chopped

What You Will Need
For the cake
- 110g of unsalted butter, soft
- 110g of caster sugar
- 2 eggs
- 110g of rice flour
- 1 tsp baking powder
- 5 limes, zest finely grated
- 30ml of gin
- 30ml of tonic water
For the syrup
- 125g of caster sugar
- 4 limes, juiced
- 15ml of gin
- 15ml of tonic water
Gingerbread Layer Cake With Salted Whiskey Caramel

What You Will Need
For the cake:
- 1 cup unsalted butter
- 3 1/2 ounces unsulfered molasses
- 3 1/2 ounces golden syrup — use corn/agave syrup if you can’t get this
- 1 cup dark brown sugar, not packed
- 2 medium eggs
- 1 1/4 cups whole milk
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 4 teaspoons ground ginger
- 3 teaspoons ground cinnamon
- Pinch of ground cloves (I used allspice)
- Pinch of nutmeg

For the salted whiskey caramel sauce:
- 1 cup and 2 tablespoons of superfine sugar
- 1 1/4 cups double (heavy) cream

- 1-2 teaspoons flaky sea salt

For the whiskey caramel buttercream:
- 15 tablespoons unsalted butter
- 2 1/3 cups powered sugar
- 1/2 cup salted whiskey caramel sauce (see above)
- Crystallised ginger, for decoration

What You Will Need
For the cake:
- 1 cup, 2 sticks unsalted butter, at room temp
- 1 ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- ¼ cup applesauce
- 2 cups + 1 tablespoon all-purpose flour
- ¾ cup unsweetened cocoa

What You Will Need
Ingredients for the Cake:
- 4 Tbsp unsalted butter, softened to room temp
- 1 1/2 cups white granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup warm milk (I used 1%)
- 1 1/3 cups all-purpose flour
- 3/4 cup unsweetened dark chocolate cocoa powder (I used one that is a blend of natural and dutched cocoa)

Ingredients For the Filling:
- 4 cups (1 lb) fresh pitted cherries
- 1/2 cup golden rum

- 3 cups powdered sugar
- 1/4 tsp fine sea salt
- 16 oz (2 blocks) cream cheese, softened to room temp and cut into 16 pieces
- 4 Tbsp of the reserved cherry/rum syrup
Ingredients To Decorate the Cake:
- Semi-sweet chocolate chips to create shaved chocolate
- A handful of fresh cherries for the top
